
My latest obsession is paleo-type granola bars…I was inspired by this recipe over at This Gal Cooks which was actually a guest post by Spoonful of Flavor. Her photos are amazing! I immediately set-out to try make a paleo-friendly version. Below is what resulted! (I had to include a picture with my toddler’s little feet in the background…I couldn’t resist! He was so curious to what I was doing by the window with snacks and a camera.)
Almond Butter Granola Bars
Ingredients:
1/2 cup almond butter
1/3 cup honey
1/2 cup Nutiva coconut oil
2 cups unsweetened, shredded coconut
3/4 cup raw, unsalted sunflower seeds
3/4 cup almonds, chopped
1/2 tsp. salt
1/2 tsp. vanilla
3 Tbsp. Enjoy Life (allergen-friendly) Chocolate Chunks or Mini Chips
1/4 tsp. Nutiva coconut oil
Directions:
1. Line a 9×9 pan with parchment paper and set aside. Place almond butter, honey and 1/2 cup coconut oil into a saucepan and stir over medium heat just until everything is combined. Remove from heat.
2. Stir in coconut, sunflower seeds, chopped almonds, salt and vanilla to the almond butter mixture. Spread in the parchment paper-lined pan and press down evenly.
3. Melt chocolate chunks (or chips) and 1/4 tsp. coconut oil in a double boiler. Drizzle* chocolate on top of bars and place in fridge for a couple hours until firm. Cut into bars and enjoy! (Store in fridge for best texture.)
*I put my melted chocolate into a baggie and cut the corner to drizzle it.

These look delicious! I love how nicely you have the chocolate drizzle going too–I always seem to wind up with an unsightly (but delicious) glob of chocolate somewhere when I try that!
