
Fruit pizza was another one of my favorite desserts growing up. I tried recreating my mom’s fruit pizza recipe…and the crust is totally different, but the rest of it is similar to the original recipe. I made this last week…and it didn’t last 24 hours in our home…so it is a bit dangerous–but we enjoyed it! I hope you will as well!
Fruit Pizza
Crust Ingredients:
1/2 cup almonds, chopped finely
3/4 cup almond flour
1 egg
1/4 cup honey
1/4 cup butter (or coconut oil)
1/4 tsp. salt
1/4 tsp. vanilla
1/4 tsp. baking soda
Crust Directions:
1. Preheat oven to 350 degrees.
2. Mix together all the crust ingredients.
3. Press into a greased 9×13 or similar sized pan. (I made mine on a baking stone and spread it out a bit more than 9×13.)
4. Bake at 350 for 13-18 minutes or until lightly browned.
5. Cool completely.
Filling and Fruit Ingredients:
1/4 cup butter
2 Tbsp. honey
1/4 tsp. lemon juice
1/2 tsp. vanilla
Sliced fruit and/or small berries (such as strawberries, blueberries, raspberries, mandarin oranges, kiwi, banana, peaches, grapes, etc.)
Filling Directions:
1. Whip together softened butter, honey, lemon juice and vanilla until light and fluffy.
2. Spread filling on top of crust.
3. Top with desired sliced fruit in any which way you choose.
Glaze Ingredients:
1/4 cup water
2 tsp. arrowroot
1/4 cup orange juice
1 Tbsp. lemon juice
1 Tbsp. honey
Glaze Directions:
1. Whisk together water and arrowroot in a saucepan. Add orange juice, lemon juice and honey.
2. Bring to boil (whisking occasionally) and boil 1 minute.
3. Cool slightly and drizzle/spread over the fruit. Enjoy your fruit pizza!
*Top with Coconut Whipped Cream for an extra-special treat!
NOTE: I have also made this eliminating the “filling” altogether and using the “glaze” as the layer between the crust and the fruit–it is yummy both ways!

Ok, I tried making this. The crust is soupy, but tastes ok. I made the filling with 8 oz cream cheese instead of 1/4 cup butter to give it more flavor. I will not make this again.

I will try this recipe using whipped coconut cream in the filling instead of the butter. However I find it a drag to soak/dehydrate almonds before grinding into flour. Wish there was a substitute I could easily find in my store!!

I made this today, and it was a No Go! A filling of just butter and honey? Yuck. Not sure what the purpose of the “glaze” was, as arrowroot is not a thickener, not a glaze. Also, the crust came out cakey and not tasty. Bad recipe.

For the crust can you use quinoa flour instead of almond flour?

I’m going to try and make this raw/vegan! I’ll use the dehydrator instead of the oven. Will have to work on the glaze too to keep it raw. I’ll let you know how it turns out! Also, coconut butter instead of butter. and of course, no eggs! I’ll probably use chia seeds instead!

Im really curious if this would work without eggs, and if you could make a suggestion about that. My son is allergic to eggs 🙁 He’s almost 1 and hopefully will outgrow it, but for now I make everything egg free. And we don’t do dairy either 🙁 Ahh…. looks amazing though 🙂

I haven’t tried it without eggs. I don’t know a lot about egg-substitutes, but have heard that ground flax seed or ground chia seed and water works in some recipes. Maybe google the ratio of seed to water and try it! Let me know how it works if you do!

I can’t have eggs or butter, so I’m thinking of using ground dates (in the food processor) like I do to make fake-larabars – which are just ground almonds & dates… Might not be actual ‘crust’ but would make a bottom at least?

Made as written for a bbq…only adding lemon zest to filling…absolutely fabulous!! Also, I made the crust, baking it on parchment paper lined baking sheet then spread with apricot all fruit and rolled into a jellyroll then dusted with powdered sugar…big hit and an easy weeknight dessert. Thanks for such a great recipe.
