No-bake cookies are a quick and easy dessert usually consisting of oatmeal and refined sugar. This recipe uses coconut as the “main” ingredient and uses honey instead of granulated sugar. The cookies don’t set-up quite as fast as traditional no-bakes, but are worth the wait!
N0-Bake Cookies
Ingredients:
1/3 cup honey (or less)
1 1/2 Tbsp. cocoa
1/3 cup Nutiva coconut oil or butter
1/3 cup almond butter
1 tsp. vanilla
2 cups dried, unsweetened coconut
Directions:
1. Put honey, cocoa, and coconut oil (or butter) in a medium saucepan over medium-high heat.
2. Bring mixture to a boil. Boil for 1 minute and immediately remove from heat.
3. Stir in the almond butter and vanilla until it is incorporated.
4. Stir in coconut.
5. Scoop by spoonfuls unto wax paper or parchment paper and put in the fridge until hardened and set.
*Store at room temperature or the fridge. I prefer the texture of the cookies out of the fridge.

These were delicious! I increased the cocoa powder to 1/3 c. and added a bit of sea salt (1/4 tsp to a tripled recipe). Put it into a 9×13 pan lined with parchment paper and threw into the freezer for a bit before cutting it into 16 bars (you can do 32 as well if you want since it’s pretty rich). It’s amazing. Thank you.

I didn’t boil the oil and honey, and it worked great. These are fabulous!!! I can’t stop eating. I upped the delish factor by toasting the coconut first. OMG. Devour! Thank you for sharing! I so missed no bakes since giving up grains!

The non-paleo version of these with rolled oats and refined sugar (we call them ‘Poop Balls’) is one of my family’s favourite recipes, and this version did not disappoint! It’s not ‘the same’ as a regular no-bake flavour, but similar. The end result is a different cookie made with similar ingredients (make sense?)
Next time I’ll increase the cocoa powder to at least 2 tbsp because they’re plenty sweet, just not quite chocolately enough for my taste.

These look really yummy! But I have a question- why would you boil the honey and coconut oil? I get my honey raw and my coconut oil virgen…wouldn’t want to kill all those great enzymes! Is it necessary to boil for some reason? I’m going to try it now without boiling…hope it works!

These were so yummy that they never made it to the refrigerator. My family grabbed a few spoons and just dug in! Next time, I’ll have to make them when the kids are out of the house so they will have time to set up. Thank you for such a yummy recipe. It’s a definite keeper for our house.

Yes if you made it like the recipes says, it should harden up! Give it a couple hours. The coconut oil makes it firm up great but butter works well too.

I didn’t heat the mixture at all, and I wondered the reasoning too? Thinking perhaps it was just so you could mix the ingredients listed well. I used cacao nibs for cocoa and used chunky peanut butter instead of almond butter. It is yummy. Oh,and I used coconut oil. Thanks for the recipe. Getting into the raw lately, finally got a Vitamix too.

Made these yesterday. I used Swerve instead of honey, and peanut butter instead of almond butter. It was dry so I added enough almond milk to get it to stick together and mashed it all down into a 8″ square glass dish. After a couple of hours cooling in the fridge, I’d say they were perfect. Thank you so much, no-bake cookies are a major favorite with my kids. Nice to have a healthy version. I did add more cocoa, maybe will try unsweetened chocolate square next time.

If you want to use gf rolled oats in this recipe, just sub them in instead of the shredded coconut. Don’t cook them first, just use them dry and raw.

These sound amazing! I will definitely try them. Could they work with Agave Syrup instead of honey? I also had a thought of adding some Lavender flowers to them as an experiment. There is a local restaurant near us that serves a Chocolate Lavender cookie, and we have been trying to nail it down at home, but just haven’t mastered it yet. Though the texture would be different, this recipe looks like it could provide for a possible success story flavor wise, at least. 🙂

Allergic to almonds…just starting out… What would you substitute for almond butter? And a lot if reciepies call for almond flour, can’t use that…what would you substitute?

You can use sunbutter (sunflower seed butter) in place of almond butter or possibly even cashew butter. Almond flour…maybe hazelnut flour? I’m not sure.

These look really yummy. But, has anyone tried coconut nectar intend of honey? I didn’t read all the posts, so if indeed it’s been covered my advanced apologies. I do however like the idea of coconut nectar as I don’t like to use that much honey in anything.

I don’t really like the texture of coconut, so substituted sliced almonds. I reduced the amount of honey a bit. Very yummy. Had to stop making them. Seeing your recipe roundup has made me crave them again! Thanks for your recipes.

I made these and they were really “runny”. After spooning the mixture onto the cookie sheet, the liquid ran and I ended up with a thin layer of the chocolate sauce all over the sheet. I’m going to try a bit less honey and letting the final mixture sit for a while and cool before spooning onto the cookie sheets. They are delicious though. Can’t wait to make the next batch.

Mine weren’t quite that runny, but they sure didn’t stick together at all. I wonder if it is because I didn’t use raw honey? (I did cut the honey to 1/4 cup.) If it doesn’t stick next time I am going to press it into an 8×8 pan before refrigerating and cut it into bars after it sets! Hope your next batch is (was) more successful!

Make sure you are using extra virgin coconut oil, the kind that is solid at room temp. Be careful though, because it turns liquid when it reaches 76° F. It sounds like either your kitchen was very warm, or you used fractionated coconut oil rather than virgin. Hope that helps!

Well, I use Kirkland Pure Vanilla… (Ingredients: Vanilla Bean Extractives in Water, Alcohol and Sugar) and I use either 100% Raw Cacao or 100% Pure Cocoa. Hope that helps! I didn’t know there was artificial cocoa…

I hope my post doesnt show up twice, first time received an error. My family loves these cookies, so easy to make, only took 2-3 minutes to whip them up. I love having them on hand for the boys to grab when they need a cookie snack. I doubled the recipe when we had company over the weekend and everyone raved about them. No on missed the sugar or oats!

It probably would, but oatmeal is a grain and contains gluten…so that is why I use coconut 🙂

Oats do not contain gluten—they are sometimes grown and/or processed with gluten containing grains and therefore are generally avoided by people who have celiac disease or a strong allergic reaction to gluten. There are, however, brands of gluten-free oats available. Bob’s Red Mill is the brand I use and I’ve made cookies very similar to these in the past with the oats instead of the coconut.

These are so good!! I just made them again. I use sunbutter instead of almond butter, use raw cocao powder instead of cocoa powder and a little more than what is called for, and don’t boil the mixture. I warm it on low just enough to incorporate with out losing all the good stuff. They remind me more of the coconut chocolate girl scout cookies than no bakes, very yummy!

It worked! They were great and still retain great enzymes! I just gently heated the oil and honey until it was melted (fast since it’s summer) and then removed from heat and followed the rest of the directions. GOOD stuff! Thanks! 🙂

Hi Melissa! I started with a no-bake recipe (with refined sugar and oatmeal) that called for boiling…so that is why I did it. That would be great if it worked without boiling! Let me know! I haven’t tried it before.

A friend made these last week and they were AMAZING! Tonight I’m making them and pressing them into little cups using a mini-muffin pan and then filling them with my favorite paleo-pudding made of one banana:one avocado in the blender until smooth and delicious.
