Finally! A cereal-substitute we like that reminds us of cereal!! The recipe I based this one off of is from Civilized Caveman and is found here. Thanks for the great recipe, Civilized Caveman!
Raisin Nut Crunch Cereal
Ingredients:
1/2 cup sunflower seeds
1/4 cup pumpkin seeds
2 Tbsp. squash seeds (or more pumpkin seeds)
1/2 cup almond meal (I used dried almond pulp from making almond milk)
1 1/3 cup coconut
1 cup almonds, chopped
1 1/2 tsp. cinnamon
3 Tbsp. coconut oil
1/4 cup raw honey
1 tsp. vanilla
1 cup raisins (added after cereal is baked)
Directions:
1. Preheat oven to 325 degrees.
2. Combine all dry ingredients (except raisins).
3. Warm coconut oil and honey slightly so they are easily incorporated. Pour oil, honey and vanilla over dry ingredients. Mix well
4. Spread cereal mixture over large baking pan (15 x 10 or bigger) and bake at 325 degrees for 20 minutes. Take out of oven, stir mixture and bake for another 5-7 minutes.
5. Cool. Add raisins and serve with homemade coconut milk or homemade almond milk! Store in an airtight container.

What do you suggest for a serving size? Do you know calories per serving as well as fat, carbs and protein?
I just made it and it’s really good!
So do you sometime eat it with berries on it and a little almond milk over it?

Do you know if coconut flour can be substituted for the 1/2 cup of almond meal? I thought I had some almond meal/flour but evidently not and I’m trying to avoid going to the grocery store if at all possible. Thanks!

I love how flexible this recipe is. I throw in Brazil nuts, hazel nuts, almonds, walnuts, pecans, or whatever else is around that seems like it would be good. It always turns out great! Even my grain-eater family and friends love this.
Fresh fruit is nice on top. Or, I like to add it to the top of yogurt as if it is granola. There are so many options!

Great recipe. I had to change the liquids because of sugar issues. I doubled the coconut oil and vanilla, added half teaspoon liquid stevia and added an egg white to hold it together. Personal preference will be to make it a tad sweeter, but it was still really good! Thank you.

Do you think this recipe will work substituting Liquid Stevia for the Raw Honey (I donβt have any honey on hand)? I was thinking about trying 1/4 teaspoon of LS in place of the 1/2 cup RH. Thoughts?

In this recipe, almond flour, almond meal and dried almond pulp all should work. Almond flour/meal are generally the same thing–at least with the brand I use (Bob’s Red Mill).
