We love waffles. And these waffles make us pretty happy, especially considering they are paleo!
Coconut Flour Waffles
Makes: 5-6 four-inch waffles
Ingredients:
4 eggs, separated
2 Tbsp. coconut oil, melted
1 tsp. vanilla
1/2 tsp. baking soda
1/8 tsp. salt
1/8 tsp. cinnamon
1/3 cup almond milk or coconut milk
1/4 cup sifted coconut flour
1/2 Tbsp. honey
Directions:
1. Put all the egg whites in a bowl and set aside.
2. In a second mixing bowl, combine egg yolks and all the rest of the ingredients.
3. Beat egg whites until stiff peaks form. Fold egg whites into batter mixture and gently mix until egg whites are incorporated.
4. Pour appropriate amount unto your waffle iron and cook. (On my waffle iron, I put 1 – 1 1/2 cups of batter on it and cook for 2 1/2 -3 1/2 minutes.)
5. Serve with fruit, pure maple syrup, and/or coconut whipped cream!
*This recipe can easily be doubled or tripled and the leftovers saved for later!

I think its safe to say that this recipe is my go to coconut flour waffle recipe. I’ve used this about 4 times now and they always turn out nice and fluffy. Because you add vanilla i’ve been adding vanilla to all my pancake/waffle recipes and it’s fantastic. Thanks for sharing this!

When you say coconut milk, for the waffle recipe, do you mean the kind in the can or the kind you buy in the carton in the dairy section?

I use carton or homemade almond or coconut milk…haven’t tried the canned version.

just made these, had to replace the “milk” with a banana since i was out of coconut milk and they look beautiful. =D They are fluffy and very tasty!!! I am absolutely going to do this again.

These really are the BEST paleo friendly waffles I’ve ever made. My grain eating husband happily gobbled them up and asked me to make them again the following morning. We topped them with chocolate coconut cream and a drizzle of maple syrup. They were decadent!

I have not tried an egg-substitute for this recipe. Sorry! I don’t think it would really work since you need to whip the egg whites. I guess I would try to find a waffle recipe that doesn’t separate the eggs.

whipping the egg whites should be optional….A small amount of yolk got in the whites so I could not get to stiff peaks but i continued any way. they were great. so egg replacement should work the waffles may end up less fluffy and a bit more dense, but should still be good.

Thanks for this recipe, my waffles turned out great! I used about a 1/2 cup of batter in my waffle iron and made 4 waffles with one batch. The texture was light and fluffy. The flavor was good, but I forgot the salt which would improve it. They were not as crispy as waffles made with grain, but I don’t have a problem with that. I will be making these again, maybe even tomorrow!!

I have made this twice so far for my family and everyone them. These are by far the best paleo-fied breakfast treatI have found on the internet and had consistent success with. A keeper for sure!

These were an epic fail in the waffle maker. The batter separated on me and didn’t cook—not sure why. It took me half an hour to scrape all of the batter off the waffle plates. I tried using the remaining batter to make pancakes and they were delicious! Might just be a problem with my waffle maker.

The batter separated?? That is weird. I make these like once a month and have never had a problem. I’m sorry! I’m not sure what happened. Was it the egg whites that separated? You need to mix them until everything is combined.

These did not turn out so great for me. :(. They essentially “exploded” all over the inside of the waffle iron (probably too much batter) but I was ale to fix it with the addition of whole wheat pastry flour. (We do not have gluten issues, just like to try new things)
Am still bookmarking it and maybe adjusting into a pancake recipe. 🙂

I just tried it this morning, they were great! The only thing is that I liked my waffles more crispy and for some reason with coconut flour they are always moist inside, any suggestions?

I followed the recipe! EXCEPT….I cut the egg whites down a little. I only used 1/4 cup and the recipe then wears perfect for pancakes!

I just made this recipe. I like it a lot! I’ve made at least one other paleo-style, coconut flour waffle/pancake recipe and it wasn’t very good. The other recipe was very, very heavy. I did a web search last night, looking for a recipe with whipped egg whites and found yours. Thanks for sharing!
