Vanilla Cupcakes
Ingredients:
1/2 cup sitfted coconut flour
1/4 tsp. baking soda
1/4 tsp. sea salt
4 eggs
1/3 cup coconut oil or butter (melted)
1/2 cup honey
1 Tbsp. vanilla
Directions:
1. Preheat your oven to 350 degrees F.
2. Combine all the dry in ingredients in a medium bowl and mix well.
3. Add the wet ingredients to the dry ingredients and mix well (a hand mixer works great).
4. Divide batter among 8 cupcakes.
5. Bake for about 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
6. Cool and then frost.
*Store in a airtight container at room temperature for a few days or in the fridge for about a week.
Chocolate Frosting:
1/2 cup butter, softened
1/4 cup honey
2 Tbsp. cocoa
Whip together and frost! I would like to try making the frosting using coconut oil, but I am currently out. I think the texture would be a bit lighter.
Vanilla Frosting:
1/2 cup butter, softened
1/4 cup honey
1 tsp. vanilla
Whip together and frost! As mentioned above, I’d love to try this with coconut oil and see how it turns out.
Note: One batch of frosting was more than enough to do the 8 cupcakes (the way I frosted them in the picture).

I am not sure. Is it like a granulated sugar? You could sure try. I might reduce the baking time and watch it for when it gets done. And you may need to add more as honey is very sweet so you don’t need a large amount of it. Let me know if it works!

I know this is pretty old, but I found it recently. I did use coconut oil to make the frosting. It comes out as a liquid, you have to chill it for a bit (I’ve been throwing it into the freezer for about 30-45 minutes) and then blend it with a hand mixer and it comes out nice and fluffy. I also added a teaspoon of tapioca flour (arrowroot is good, too) to make it a little thicker. I’m going to try palm shortening based on the suggestion of another recipe. One thing you have to watch for with the coconut oil is the low melting temperature, the frosting will melt if it gets too warm.

I forgot to mention I also added about a teaspoon or so of tapioca flour to the main mix as well, makes it bind quite nicely.

Goodness Gracious these are soooo good! I used a quality maple syrup in the vanilla frosting instead of honey (for a more fall flavor). Honestly, these are some of the best cupcakes I have ever had!

Do you think that I could substitute the eggs with bananas and substitute the honey with 100% pure maple syrup? My son hasn’t tried eggs or honey yet (he has many food allergies).

You can often substitute maple syrup for honey in recipes without their being problems, but I am not sure about the bananas for the eggs. Coconut flour is tricky in where it needs more eggs in the recipe to hold it together. It would be really cool if it worked with bananas, but I really have no experience trying that. Sorry!

Hi, I don’t know if its just me, but whenever I use coconut flour in baking the product always comes out dry and crumbly. What am I doing wrong?

Coconut flour is tricky and different. I would try checking your recipe a couple minutes sooner than the recommended minimum time. I read a post once on how if you overcook a coconut flour baked good by a “millisecond” it would be super-dry. I try to pull out brownies/cupcakes as soon as the toothpick inserted comes out mostly clean.

Just finished eating one these. They were great! I was concerned that there would be a strong coconut-y flavor, but there was just a slightly sweet, moist, and delicious cupcake. Definitely saving this recipe. I also think that these were easier to make than traditional cupcakes. thanks!

Hmmm…I have not tried that yet so I am not sure. I would guess that one recipe would be close to a round cake pan? But I’m not sure. I would probably double it if you are going to put it in a 9×13. Let me know how it goes!

I tried making the frosting but had no luck. The cupcakes turned out great!! But how much would you use of coconut oil for the frosting? Oh and I ran out of honey so I tried using raw honey for the frosting LOL
