
Chocolate Pudding
Ingredients:
1/4 cup unsweetened cocoa
1/4 cup arrowroot
1/4 tsp. salt
2 cups homemade or store-bought almond milk or coconut milk
1/3 cup honey (or more–next time I will probably do 1/2 cup)
1 1/2 tsp. vanilla
Directions:
- Combine cocoa, arrowroot, salt and 1/4 cup milk in a medium saucepan. Stir well.
- Add the rest of the milk and honey. Stir well.
- Place saucepan over medium heat and cook while stirring until thickened (about 10-13 minutes).
- Remove saucepan from heat and add vanilla. Pour into serving dishes and chill 2 or more hours until set. Enjoy!*Top with some coconut whipped cream!

I went grain free over a year ago due to ulcerative colitis. This pudding recipe, the dutch baby recipe, and the banana bread recipe have been absolutely wonderful! I give the banana bread to my kids in their lunches and they don’t even ask if it is “healthy”. I ran out of honey so I only used 1/4 cup of it in the bread and it was still delicious. I used stevia in the raw blend instead of honey in the pudding and it still set up. I’m watching calories ever since I stopped nursing and this pudding ended up being only about 210 calories for the whole batch!

how does yours turn out so smooth? mine has huge clumps in it. i’m hoping that if i boil the flip out of it that they will dissolve somehow. any tips?

I whisk it quite a bit while cooking and also try to whisk the arrowroot into the milk before I start heating it.
