I am working on getting a homemade chocolate chip recipe put together, but for now, I cheat and use store bought dark chocolate chips– and they are delicious…
Almond Butter Dark Chocolate Chip Cookies
Ingredients:
1 cup almond butter
1/3 cup honey (or 1/2 cup if you like it a bit sweeter)
1 egg
1 Tbsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. baking powder (optional)
1/2 tsp. salt
1/2 cup dairy-free chocolate chips (I love these!) or dark chocolate chips of your choice
2/3 cup unsweetened coconut (or if you prefer, replace with chopped nuts)
Directions:
1. Preheat oven to 350 degrees.
2. Oil baking sheets or line with parchment paper.
3. Stir together first seven ingredients. Mix well. Make sure honey is fully incorporated.
4. Add chips and coconut.
5. Scoop with a cookie scoop onto cookie sheets. Bake 8-13 minutes or until lightly browned.
Yield: about 20 cookies with a level 2 Tbsp. cookie scoop

I had run out of honey so used rice malt syrup. Same consistency as honey. They taste really nice. Will make again for sure.

These came out great!
I made a second batch with peanut butter and they came out a tad bit crumbly. Anyone know why or how I could still use peanut butter but have them not be so crumbly? They are super delicious with peanut butter….

WOW, just WOW! I made these easy and amazing cookies! I used 1/2 honey as suggested and they are sweet and delectable. I also substituted chopped pecans for the coconut because I loathe coconut. I had to put them away to resist eating them all! I used a small Pampered Chef scoop for the cookie and it made 40 for me, 2″ when finished cooking. The parchment paper (thanks for that) made them easy to slide off the pan onto a cooling rack. I will definitely follow YOUR paleo friendly recipes again! There are so many out there with bad, pathetically bad recipes for everything under the sun.

Yes– 1 Tbsp ground chia seed and 3 Tbsp water. You could probably sub agave or coconut sugar for the honey…

Made these a few nights ago and absolutely LOVE them. I used 1/3 cup of shredded coconut and 1/3 cup of chopped walnuts. The cookies stay nice and soft so if you like a little crunch- store them in the freezer- so good with a glass of almond milk. Only drawback- I’m addicted!

Hi Katrina! I have used Nestle Dark Chocolate Chips and currently am using a dairy-free chocolate chip that I get through Azure Standard b/c my daughter can’t eat dairy. Enjoy Life also makes dairy-free chocolate chips. You can use whatever you like though 🙂

Hi! These are absolutely fantastic! I would love to make these for my friend, but she is allergic to tree nuts- do you think they would be just as tasty with Sunflower Seed Butter? I know that they will probably turn green because the sunflower seeds react with the baking soda, but if you can’t tell the difference in taste it is so worth it!

I am allergic to peanuts, tree nuts, also. Have you heard of WOW Butter? Smells and tastes like peanut butter, but not and also manufactured nut free facility. You could google it and get some info. I found it in Super Center Wal-Mart well over a year ago.

Well they aren’t cakey like coconut flour cookies, but not quite crunchy either. If you flatten them a little before baking and bake an extra minute or two they’d probably be crunchier 🙂

just recently made these cookies and stored them in an airtight container. The next day they were all really soft and almost sticking together. Are they supposed to be like this or can you think what I might have done wrong? I let them completely cool before storing.

Do these cookies melt down from balls when they bake or do you need to flatten them before they go in the oven?

For some reason, it varies. I usually just plop the ball on the sheet and leave it and they spread out some. You may want to press them down a bit if yours don’t spread out–it might have to do with the consistency of the almond butter.

Directions say (step 3) “Stir together first 8 ingredients” then (step 4) “add chips and coconut”, but there are only 7 ingredients listed before the chips and coconut. Sooooo, I thought I’d better get some clarification before making these. Is something missing, such as almond meal or coconut flour? Partly wondering since an above comment mentions flaxmeal, so I keep thinking something must be missing to bind and bulk this, especially since it says it yields 20 cookies or so. Thanks.

Sorry about that! It is because I used to have flaxseed as an optional ingredient but decided they were better without it. There isn’t any flours in the recipe–the base is almond butter. Hope that helps!

These are really delicious! I made them today and already had two! I used almond butter out of a jar (salted, so I omitted the salt from the recipe). The only problem I had was they were pretty flat when they came out of the oven. My husband loves them too btw…

Hi Laura! I’m glad you liked them! Did you use the flaxseed meal and both baking soda and powder? I have noticed that the flaxseed meal changes the texture…I keep experimenting around with using/not using it. Most of the time I use 1/2 Tbsp. or none at all. Experiment with that part of it and see if you can get the texture you desire.

Oh right, I didn’t put flax seed meal in because I’m avoiding flax right now (too estrogenic, I’ve heard… like soy, so have to stay away for a few months). I can experiment with using some almond flour, like a tablespoon or something, to make up for it.
