Sweet Potato Fries
Ingredients:
1 large sweet potato (or yam)
1 Tbsp. butter (melted)
salt
pepper
Directions:
1. Preheat oven to 450 degrees
2. Peel sweet potato or yam (or leave peelings on!)
3. Cut potato into 1/2 inch strips.
4. Place strips of potatoes unto 10×15 baking pan and drizzle with melted butter.
5. Stir the potatoes around to coat them with the butter.
6. Sprinkle salt & pepper on top and bake at 450 degrees for 18-25 minutes or until they reach desired tenderness.

Hello,
I just wanted to tell you how useful and interesting I find your blog. I found it by typing in a search for Coconut Flour Banana Muffins. A lot of other blogs came up to but one recipe in particular steered me towards you. I am referring to the Coconut Flour Apple Pie Muffins. They are made with Banana Puree, cut up apples, and pumpkin puree. I like the recipe because it is incredibly moist and fulfilling. I tried the Sweet and Sour Pineapple Chicken. I wanted to let you know that now, my husband is specially requesting that dish once a week! LOL. Any how, I also wanted to let you know that I am enjoying the recipes that you are referring people over to called Nourished Gourmet. I like a couple of ideas on that blog as well. I will continue to try some more recipes. I guess the most appealing thing about the recipes to me personally, is that they look delicious, not to difficult to have success, and are very easy to make. So thank you for your efforts to help people who are on special diets to have a nice nourishing meal without too much effort.
